Shannon’s Sémillon vineyards are planted on Table Mountain Sandstone, about eight miles away from the cooling influence of the Atlantic Ocean. Selected parcels of grapes undergo some skin contact, prior to fermentation in barrel using the natural yeasts. Matured in new French oak barrels for 3 months with aromas of ginger, lime zest and quinine; the palate has a saline minerality, spice and citrus.
